When cooked right, beets are one of my favorite foods; they are sweet, tender, juicy and earthy. If cooked improperly, they can be bland, boring and taste like wood, metal or even dirty socks. So the take away is... COOK BEETS THE RIGHT WAY.
Now depending on the application you can cook your beets different ways, but my go to is the ROAST BEET. It is easy, and roasting develops the sugars and keeps the color, so you have a delicious and sweet beet, rather than a watery and flavorless piece of something.
STEP 1: Wash the beets - get that dirt off... no one likes a dirty, sandy beet. Preheat your oven to 375 degrees F.
STEP 2: Trim the root end. trim the root end creating a flat surface.
STEP 3: Lay out tin foil... despite common belief it does not matter which side is down or up.
STEP 4: Place the beets on the tin foil. Flat side down.
STEP 5: Season the beets with olive oil, salt, pepper and a few sprigs of herbs. Thyme is preferred.
STEP 6: Wrap the beets up. Fold each side over to make a pouch.
STEP 7: Put the beets in the oven. Cook till tender, about 35 min. You should be able to insert a knife into the beet with ease.
STEP 8: Let beets cool in the pouch. Then peel them by rubbing them with a paper towel!
STEP 9: Serve!
